These sweet-and-spicy chicken thighs use pantry staples and high-temperature roasting for flavorful meat and crisp skin. A buttery hot sauce glaze gets a final boost from honey, lime zest and fresh lime juice. Serve with cucumber salad or coleslaw for a refreshing contrast.
Heat the oven to 450°F. Line a rimmed baking sheet with foil and season the chicken on all sides with salt, pepper, onion powder and garlic powder. Place skin-side up and roast for 20 minutes, until browned.
Meanwhile, whisk together the melted butter and hot sauce, reserving half in a separate bowl. Brush the chicken all over with the other half, then roast for another 10 to 15 minutes, until golden and cooked through. Remove from the oven.
Zest the lime, then halve it. Whisk the honey and 1 teaspoon of lime zest into the reserved butter mixture. Brush over the cooked chicken, squeeze lime juice on top and serve immediately.
Excellent flavor and super easy. Use a fun side dish like gourmet cole slaw
