Slow-Cooker Garlic Butter Chicken

Inspired by escargot butter, this rich chicken braise combines garlic and herbs with a handful of simple ingredients. Sour cream stirred in at the end gives the sauce a creamy finish. Serve with plenty of croutons for crunch and to absorb the sauce, or pair with thick slices of crusty bread.

Ingredients

  • 1 1/2 to 2 pounds boneless, skinless chicken thighs
  • 2 15-ounce cans cannellini beans, rinsed
  • 4 tablespoons unsalted butter, cut into chunks
  • 8 large garlic cloves, smashed and chopped
  • 1/3 cup chopped fresh parsley, plus more for serving
  • 1 shallot, minced
  • 1 lemon, juiced
  • kosher salt (such as Diamond Crystal) and pepper
  • 1/2 cup sour cream
  • homemade or store-bought croutons, for topping

Preparation

  1. 1

Place the chicken, beans, butter, garlic, parsley, shallot and lemon juice in a 6- to 8-quart slow cooker. Add 2 teaspoons salt and several generous grinds of pepper, then mix. Cook on low for about 4 hours, until the chicken is tender and the flavors have blended.

  2. 2

Use two forks to pull the chicken into large pieces, then stir in the sour cream.

  3. 3

Spoon into bowls and top with croutons and additional parsley.

Really just perfect; make fresh croutons
