Oven BBQ Ribs

These easy oven-baked beef ribs deliver barbecue flavor with pantry spices and a sticky, smoky-sweet sauce. Sealing the ribs in foil helps them become tender and juicy, whether you use a full rack or individual pieces. For smaller pieces, begin checking early and look for meat that releases easily from the bone.

Ingredients

  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons smoked paprika
  • 1 tablespoon fine sea salt, plus more to taste
  • 2 teaspoons black pepper, plus more to taste
  • 4 pounds beef back ribs or beef short rib rack
  • 1 teaspoon olive oil or avocado oil
  • 1/2 cup barbecue sauce, homemade or store-bought

Preparation

  1. 1

Preheat the oven to 300°F and line a large rimmed baking sheet with aluminum foil.

  2. 2

Combine the garlic powder, onion powder, smoked paprika, salt and pepper in a bowl.

  3. 3

Arrange the ribs in a single layer on the prepared pan. Coat with the oil and spice mixture, turn meaty side up, and tightly seal inside the foil.

  4. 4

Bake for about 3 hours, until the meat begins to pull away from the bones. Short rib racks may need another 30 to 60 minutes; check at 3 hours and continue baking as needed.

  5. 5

Remove the ribs and uncover the top. Raise the oven temperature to 350°F, brush the ribs with barbecue sauce, and bake uncovered for 20 minutes more.

  6. 6

For the grill alternative, prepare indirect heat at approximately 275°F. Place the ribs directly on the grate, meaty side up, and cook for 2 1/2 hours at a steady temperature. Flip and cook for another 30 minutes.

  7. 7

Transfer the grilled ribs to two long sheets of heavy-duty foil, meaty side up, and seal tightly. Return to the grill for about 1 hour, until the internal temperature reaches 200°F; this foil-wrapped stage is essential for tenderness.

  8. 8

Carefully unwrap the ribs, return them to the grate, and brush with barbecue sauce. Grill for 5 to 15 minutes, then flip, sauce again, and grill another 5 to 15 minutes to reach your preferred char. Serve with extra warm barbecue sauce.

Notes

Cooked at 300°F for 3 hours, then gave the ribs another 30 minutes before adding barbecue sauce; the meat turned out perfect. Leftovers were even better, served cold with a hot pretzel or good onion rings and pickles. Loved the recipe: the ribs are pricey, but they provide two meals for two. Suggested sides are Rancho Beans, coleslaw and butter pickles.
