This spicy, saucy slow-cooker chicken needs little morning prep and just a few minutes of finishing before serving. Enjoy it as a stew with toppings, spoon it over rice or grains, or use it to fill tacos or enchiladas, draining excess sauce if necessary. Taste the salsa to check its heat, adjust the chiles to your preference, and optionally stir in corn or drained beans with the herbs at the end.
Mix the chicken, salsa verde, green chiles, garlic, jalapeño, garlic powder, onion powder and cumin in a 6- to 8-quart slow cooker. Wait to add salt, since the salsa may already provide enough.
Cook on low for 5 to 6 hours, until the chicken is tender. If you will be away for at least 8 hours, program 4 hours on low followed by an automatic switch to warm.
Shred the chicken roughly with two forks. Keep the cooker on low and stir in the scallions and cilantro.
Season with salt and lime juice to taste. Serve over rice or in tortillas if desired, adding your chosen accompaniments.
2 years ago: A longtime favorite. When only medium-heat salsa verde is available, use two jalapeños without changing the amount of green chiles. 6 years ago: Easy and excellent, with plenty of flavor, heat and depth. Used our Hatch green chiles and otherwise followed the recipe exactly. Serve with warm tortillas.
